Serving Drinks 

While the patrons at a buffet restaurant are responsible for getting their own food, they seldom get their own beverages. At most of these eateries, drinks are the responsibility of the server. When guests sit down at their table, you'll visit them to welcome them to the restaurant and ask if they wish to order any drinks. You'll take the orders and bring the customers their drinks, even if they're away from the table and at the buffet when you return. You'll have to keep an eye on their drinks throughout the meal and offer top-ups when necessary.

Clearing Plates

Someone who has a large appetite at a buffet restaurant may go up to the buffet several times throughout the meal, getting a new plate each time. As a server, you'll be responsible for clearing the dirty plates off the table so that it doesn't get cluttered. It's a good idea to watch your table to see how many people are seated at it. If there's an empty chair, which implies that one of the patrons has gone to the buffet, you'll want to quickly visit and remove their old plate so it's not in the way when they return.

Providing Cutlery

Patrons at buffet restaurants will sometimes lose their cutlery throughout the meal. While it's normal to keep your cutlery as you dine, some people will leave dirty cutlery on the plates that they want their server to remove. Rather than handing them back their dirty cutlery, you'll need to take note of who might need a new knife, fork, or spoon and bring it to them promptly.
